Croissant With Brie, Pear, and Ham

A Croissant With Brie, Pear, and Ham is one my most favorite and elegant sandwiches. Extremely easy to make, this hot sandwich can be ready in 20 minutes.

A 4-ingredient hot sandwich.

You need to trim the rind from your slice of brie. The night before I make the sandwiches I take very cold brie from the refrigerator and shave off the rind with a sharp paring knife. It’s impossible to remove every bit of rind. Just trim off as much as possible, and return the brie to the refrigerator.

On the day of making the hot croissant sandwiches, remove the brie and the ham from the refrigerator, and let them come to room temperature. Carefully slice the croissants in half horizontally, and spread the softened brie on the bottom half of each croissant.

Replace the tops, set on a baking pan or sheet, and heat in a 350-degree oven for about 12-14 minutes until the brie has begun to melt. Watch that your croissants are not burning on the top.

While the hot croissant sandwiches are heating, trim the ham slices so that they will fit neatly on the croissants. Slice the pears very thinly. Though they have become increasingly hard to find, the comice pear is your best choice for this recipe. When ripe, they are sweet, juicy, and have a superior flavor. If you can’t find them, use any other ripe pear.

When the brie is quite melted, remove the croissants from the oven and take off the tops. Divide the trimmed ham slices over the melted brie.

Then distribute the pear slices over the ham, and replace the tops. Return to the oven on the baking pan for just 1 or 2 minutes, just until the pear and ham are warm.

Serve the Croissant With Brie, Pear, and Ham while hot.
