There are all sorts of breakfast sausages—mostly in links—that are available in supermarkets. For a real taste treat, try these easy-to-prepare homemade Breakfast Sausage Patties to serve with eggs, pancakes, or waffles.
Finely chop the fresh sage.

Chop the sage.
In a small bowl, mix together the sage, marjoram, brown sugar, cloves, allspice, black pepper, nutmeg, salt, cayenne, and pepper flakes.

Mix the herbs and spices.
Incorporate the herbs, spices, and seasonings into the ground pork with your fingers.

Mix the seasonings into the pork.
Form the mixture into 6 patties.

Form into patties.
Heat 2 tablespoons of vegetable oil in a skillet, and fry the sausage patties on medium-low heat until thoroughly cooked through and nicely browned on both sides.

Fry the sausages.
Remove the sausages to paper towels.
If you are serving the Breakfast Sausage Patties with eggs, fry the eggs in the same skillet, using the rendered fat from the sausages.
